Eggplant Dippers

Wash Eggplant
Cut eggplant in 1/4 inch slices
Whisk together 2 eggs + 1/2 up milk
Measure 1 cup italian breadcrumbs
Dip eggplant in milk mixture
Dip eggplant in breadcrumbs
Dip same slice in milk/egg again
Dip same slice in breadcrumbs again
Place eggplant slice on a baking tray
Repeat with all slices of eggplant
Place in a 375 degree oven for 10 minutes
After 10 minutes, take the eggplant out and flip it
Put back into the oven for 10 more minutes
Serve hot, with ketchup for dipping
